A Simple Salad I Make Weekly

Not even kidding when I say, I make this salad every week (at least once, if not more) for the past year, I’m obsessed. I will add in other ingredients based on what’s in my fridge and my mood but wanted to finally make note of it on my blog since I’ve talked about it a lot on stories! It’s so delicious, I truly don’t think I could ever get sick of it.

So, the OG’s for this are arugula (always my green of choice), roasted chickpeas (I like Whole Foods 365 brand, rinsed and dried and then cook in the oven for 20 minutes on 400º), avocado, salt, pepper, and a honey mustard vinaigrette. For the dressing, I do 1 spoonful of dijon, a little more olive oil than dijon for consistency, a little bit of raw honey, red wine vinegar, and salt and pepper. I’ve recently started adding quinoa which I have really loved!

So easy, and such a good foundation to either keep simple or make it your own with additional favorite ingredients. Happy Wednesday! x
